Maine’s most lucrative fishery closes the season at an eye-popping $2,100 a pound

April 26, 2022 — The season for baby eels known as elvers is close to winding down, with dealers buying more than 9,200 pounds valued at an average price per pound of $2,161.

The Maine Department of Marine Resources, which released the harvest numbers, said the price per-pound was a 20% increase over last year, when elvers sold for $1,800 a pound.

The average per pound value this year has also exceeded $2,000 per pound for only the fourth time in the history of the fishery, the Department of Marine Resources said.

Most of the elvers are sold to Asian aquaculture companies, which use them as seed stock so they can raise the eels to maturity. They’ll eventually be used in Japanese dishes and some will return to the United States for use in sushi restaurants.

The FDA Warns One of New York’s Most Expensive Restaurants over Seafood Import Violations

October 26, 2017 — SEAFOOD NEWS — One of New York’s most expensive restaurants is in some trouble with the Food and Drug Administration over its fresh fish.

Masa, which earned three Michelin stars for its $595 tasting menu (before drinks and tax), received a warning letter from the FDA dated Oct. 16 alleging violations of federal rules that govern seafood imports. “Your fresh trevally and fresh Katsuwonus pelamis (Katsuo), also known as skipjack tuna or bonito,” the agency wrote in a letter published online this week, “have been prepared, packed, or held under insanitary conditions whereby they may have been rendered injurious to health.”

“We take FDA regulations very seriously and, of course, food safety is always a priority. We are working closely with our purveyors in Japan to get this resolved quickly,” said Tina Clabbers, a representative for Masa, in an email.

While the the FDA doesn’t typically regulate individual restaurants, the agency has jurisdiction over seafood importers. Inspectors visited Masa on June 22, according to the letter, which redacted the name of the restaurant’s fish supplier.

The letter doesn’t specify the precise nature of the violation, and a spokesperson in the FDA’s New York district office was not available for comment.

The regulation for which Masa was cited requires fish importers to ensure that foreign suppliers meet the same standards for safety that domestic processors must adhere to. The FDA warning letter says the restaurant “must implement an affirmative step” to comply with the seafood import rules but failed to do so for the aforementioned fresh trevally and Katsuo.

Affirmative steps could include getting records from foreign suppliers about their compliance with FDA standards, inspecting the foreign facility or other actions to verify that the fish is up to code.

High-end sushi chefs have clashed with regulators before over rules that require that fish intended for raw consumption be frozen before serving. The freezing process is intended to kill pathogens. Masa’s 20-plus course omakase menu uses ingredients “only in their freshest most delicious state,” according to its website.

New York City health inspectors gave Masa an A grade in July 2016. The health department did not cite any violations regarding fresh fish.

How Ocean Aquaculture Could Feed the Entire World – and Save Wild Fish

Marine researchers at the University of California, Santa Barbara, mapped out the potential of the open ocean to support farmed fish and came to some surprising conclusions.

August 21, 2017 — About five out of every six fisheries worldwide has reached or passed the limit of what it can sustainably produce, according to the World Wildlife Fund. Drought, dams, agricultural runoff and other pressures have depleted wild salmon populations in the Eastern Pacific, while on the east coast of North America, wild Atlantic salmon exists mainly in the memories of the Greatest Generation. Bluefin tuna, the preferred delicacy of the world’s finest sushi chefs, is at 2.7 percent of its historical population – about the same as the Bengal tiger.

Meanwhile, seafood farmed in coastal regions has been infected with sea lice, pollutes neighboring ecosystems with waste, sometimes produces fewer nutrients than are fed into the system, often destroys carbon-sequestering mangroves and can require large amounts of antibiotics to stave off disease.

But according to a new study from the University of California, Santa Barbara’s Bren School of Environmental Science and Management, aquaculture could feed a global population expected to grow to nearly 10 billion by 2050. Lead author Rebecca Gentry, a newly minted PhD in marine ecology, and her colleagues wrote that the open ocean “is largely untapped as a farming resource,” representing “an immense opportunity for food production.” In the study published August 14 in the journal Nature Ecology & Evolution, they found that the entire world’s current output of wild-caught seafood could be farmed in areas that in total would comprise just 0.015 percent of the ocean’s surface area, if grouped together in a way that the authors note would not be realistic or recommended. That’s the equivalent to the size of Lake Michigan.

“People assume the oceans are big but no one had quantified it,” Gentry said. “There’s not that much broad-scale ecological research on marine aquaculture, so we needed a base of information to get an idea of where we can do it.”

NOAA rejects bid to list tuna as endangered

August 9, 2017 — The Trump administration on Tuesday chose not to list the Pacific bluefin tuna as an endangered species, rejecting a petition by the largest global conservation group that the U.S. is a member of, with France, South Korea, Australia, and several other countries.

The Commerce Department’s National Marine Fisheries Service announced the decision after a 12-month review of the request that started under the Obama administration.

In response, environmentalists are organizing an international boycott of sushi restaurants, decrying what they say is the startling reversal of the agency’s original intent to list the tuna under the Obama administration.

The agency said that it looked at all factors affecting the bluefin tuna’s habitat, and based “on the best scientific and commercial data available … and after taking into account efforts being made to protect the species, we have determined that listing of the Pacific bluefin tuna is not warranted,” the agency said in a notice published in the Federal Register.

The International Union for Conservation of Nature had petitioned the U.S. government to list the tuna after assessing “the status of Pacific bluefin tuna and categorized the species as ‘vulnerable’ in 2014, meaning that the species was considered to be facing a high risk of extinction in the wild,” the notice read.

Tuna won’t be listed as endangered, Trump administration says

August 8, 2017 — Rejecting a petition from environmental groups, the Trump administration announced Monday that it will not list Pacific bluefin tuna — a torpedo-shaped fish that can grow to 1,000 pounds and which sells for $100,000 or more per fish in Japanese sushi markets — as endangered, despite that fact that the animal’s population has fallen 97 percent.

Even with heavy fishing pressure, the steely fish, which swim 6,000 miles between California and Asia, still number about 1.6 million, officials from NOAA, the National Oceanic and Atmospheric Administration, said Monday.

“The Pacific bluefin tuna does not meet the definition of threatened or endangered under the Endangered Species Act; that is, it’s not likely to become extinct either now or in the foreseeable future,” said Chris Yates, assistant regional administrator for protected resources at the NOAA Fisheries West Coast Region in Long Beach.

“The population has been at low levels before and has rebounded,” he added.

Environmental groups, however, were disappointed. They have compared bluefin tuna to elephant tusks or shark fins — products that come from an important, but vulnerable, species and command high prices for status value.

Grant to Thomaston startup may help keep Maine elvers home

American Unagi wins a $10,000 grant from Gorham Savings.

August 2, 2017 — American Unagi, the Thomaston-based company that aims to grow Maine glass eels to market size and sell them domestically, received a $10,000 grant from Gorham Savings Bank this week as part of the bank’s Emerging Idea Award.

American Unagi was born out of Sara Rademaker’s desire to offer an alternative for this globe-trotting local resource. Glass eels, or elvers as they are better known, are caught in Maine waters and flown to Asia where they are sold to fish farms, grown out to adult length and then, quite often, processed for sushi that returns to the United States via shipping containers.

Baby eel lottery is a go in Maine, where elver fishing pays

July 14, 2017 — AUGUSTA, Maine — Maine is implementing a new lottery system for licenses to fish for baby eels, which are worth more than $1,000 per pound on the worldwide sushi market.

Baby eels, called elvers, are a major fishery in Maine, where fishermen sell them to dealers so they can be sent to Asian aquaculture companies to be raised to maturity and used as food. But industry members and lawmakers have said the fishery needs a way to bring new people into the business because many elver fishermen are nearing retirement and there is no way to get a license.

The Legislature approved a permit lottery system last month. The law will likely be in effect by late October, said Rep. Jeffrey Pierce, a Dresden Republican who serves as a consultant to the elver industry. The law states that the first lottery could be held next year on or before Feb. 15.

“At some point you have to ask: How low do you want your license numbers to go?” Pierce said. “They don’t have to hold a lottery every year, but they do have the ability if they want to.”

Use the whole fish: Japanese restaurant in New York limits waste

July 7, 2017 — Chef Yuji Haraguchi serves and stands by “Mottainai” – the Japanese concept of avoiding waste – and makes it known at his restaurant in New York by throwing away as little as possible.

Haraguchi, who emigrated from Japan to the United States in 2007, purchases his fish locally and uses the meat at his walk-in only restaurant, Okonomi, for breakfast and lunch.

“After working in the fish industry for so many years, I just realized that there are so many parts of fish that are not being utilized, which is the heads and the bones, mostly,” said Haraguchi, who opened the 12-seat restaurant in New York City’s borough of Brooklyn in May 2014.

“I was seeing it every day, and I wanted to find a way to utilize those underutilized parts of the fish and also the underutilized species of fish.”

At Okonomi, chefs simmer the head and bones of the fish for ramen stock, which they serve at dinner when the eatery transforms into Yuji Ramen with an a la carte menu of seafood-rich ramen.

After serving 69 breakfast meals and 59 bowls of ramen to roughly 130 people on a recent day, a staffer tossed out a single garbage bag when he closed the restaurant, according to Haraguchi.

Less than one-tenth of the food at Okonomi/Yuji Ramen is thrown away, according to Haraguchi.

The U.S. Environmental Protection Agency says more food fills incinerators and landfills than any other material. Food makes up a fifth of the waste stream in the United States.

“Whatever comes in, we try to serve it,” Haraguchi said, adding that he avoids stockpiling food and mixes up the menu regularly to keep customers satisfied.

Season for harvesting Eels For Sushi Will Be Over Soon

May 30, 2017 — Maine’s annual season for harvesting baby eels from rivers and streams will likely be over in the coming days.

The baby eels, called elvers, are sold to Asian aquaculture companies and used to make sushi. They are the subject of one of the most lucrative fisheries in New England and are currently selling for about $1,300 per pound.

Fishermen are limited to quota of a little more than 9,500 pounds of the eels for the entire fishery, and they are within 400 pounds of it. State officials say fishermen have a little more than 366 pounds of quota left. Once the quota is hit, the fishery shuts down.

Sushi stress: Fishermen not catching many baby eels

April 11, 2017 — The chilly rivers of Maine are causing trouble in the world of sushi.

The state’s brief, annual season for baby eels is off to a slow start because of a cold spring that has prevented the fish from running in rivers.

The baby eels, called elvers, are an important piece of the worldwide sushi supply chain. They’re sold to Asian aquaculture companies — sometimes for more than $2,000 per pound — that raise them to maturity and use them as food.

“Everything is slow,” said state Rep. Henry Bear, who represents members of the Houlton Band of Maliseet Indians who fish for elvers. “But we’re hopeful.”

Maine has the only significant fishery for elvers in the country, and fishermen are limited to a quota of a little less than 10,000 pounds (4,500 kilograms) per year.

The season started March 22, and state records say fishermen have only caught about 1,050 pounds (475 kilograms), so far. They have until June 7 to try to catch the entire allotment, which means they are well behind pace.

The average temperature for March in the Portland area this year was 28.8 degrees. The normal average is 33.5 degrees.

Fishermen said they are confident the season will pick up, as some warm weather is forecast for Monday and the rest of the week in southern Maine. Fishermen catch the elvers in rivers and streams with nets, and sell them to dealers. So far, they’re selling for $1,487 per pound at docks, state records say.

Elvers are a major fishery in Maine, and fishermen’s ability to reach quota fluctuates year to year. They reached quota in 2014, fell far short in 2015, and just about reached it last year. Early spring weather, which can be hard to predict in Maine, has emerged as a deciding factor in whether fishermen will reach quota.
